– Wine lovers searching for something new this Christmas season will be rewarded with a stop at Cherry Point Estate Wines. The vineyard has recently unveiled their latest blackberry product - Solera dessert wine. Solera, has taken three years to produce and will be available for purchase in the vineyard’s wine shop, select wine shops on Vancouver Island and the Lower Mainland and in participating BC Liquor Stores. Solera is produced by taking Cherry Point Estate Wines' world famous Cowichan Blackberry and gently applying the Solera aging process. The wine is then given significant time to age in barrel combining delicate wood notes and rich mellow fruit. Solera is left to age quietly under the watchful eye of traditional First Nations masks in a private barrel room at the vineyard. The solera process is a rare method also used in aging fine sherry and the very best balsamic vinegars. The many years of blending and aging make Solera a testament to the winemaker's patience and search for the perfect blend. “Using the solera process allows us to create a dessert wine with an evolved complexity and a smooth taste that is uniquely delicious here on the Island,” says Cory Ursulan, General Manager. “This is the next evolution in blackberry and for anyone who has previously enjoyed our Cowichan Blackberry dessert wine; this is a must-try.”
